Pumpkin Smoothie
Ingredients:
  • ½ cup of pumpkin Puree
  • ½ cup of milk or milk substitute
  • ½ cup of crushed ice
  • 6 oz. of plain Greek yogurt
  • 2 tsp. of vanilla extract
  • ½ tsp. of cinnamon
  • 1 packet of stevia (½ tsp. of stevia powder or ¼ tsp. of stevia liquid)
Directions:
Blend all ingredients until smooth. For a lower calorie and lower fat version, use low fat milk and yogurt.

Savory Pumpkin Hummus
with 986 mg of Omega-3s
Ingredients:
  • 1 Tbsp. of lemon juice
  • 2 Tbsp. of tahini
  • 1/4 cup of water
  • 3/4 tsp. of salt
  • 2 15-oz cans of garbanzo beans, drained
  • 1 15-oz can of pumpkin puree
  • 3 garlic cloves
  • 1 tsp. of cumin
  • 1/2 tsp. of cayenne pepper
  • 2 tsp. of Olive Your Heart®, natural lemon flavor
  • 1/4 cup of pumpkin seeds
  • Dash of paprika
Directions:
In a blender, mix lemon juice, water, tahini, and garlic cloves. Blend until smooth. Add the garbanzo beans and Olive Your Heart®. Blend until smooth. Add the pumpkin puree, cayenne pepper, and cumin. Blend until smooth. Pour into a dish, and stir in the pumpkin seeds. Sprinkle with paprika. Refrigerate for 2 hours for optimal flavor.
