We have explored several of the variables involved in making an excellent cup of coffee in our last few editions.?We discussed using a scale, using the 16:1 ratio, and water quality and temperature.?

Today, let's look briefly at a rather complex variable which is "Grind Size."?The general rule for grind size is this:?The longer your water is in contact with the coffee, the coarser the grind.?So, it follows that Cold Brew or Cowboy coffee would use a coarse grind and Espressos would use a fine grind.

Drip Maker and Pour Overs are right in the middle. Yet, as not all coffees are created equal, grind sizes can vary by the desired result.?For example, if the coffee seems sour to me, I can grind finer, lower the water temperature and brew more slowly.?If the coffee seems too bitter, I can shorten brew time, increase water temp and increase grind size.??

I always suggest people experiment at home. Try different grind sizes with all other variables being equal and see where your preference lies.

Our?Espresso Roast?is the darkest roast we have and is considered a classic French Roast.?Cooked longer at a higher temperature, the coffee reveals a bold, sweet-smoky flavor with a rich coffee taste and a bit less caffeine.?At the higher temperature, the oils are extracted from the beans and this adds to the complex flavor.?

They have a combined 46 years of experience growing the trees that will produce your coffee.?Watering, fertilizing, weeding, grafting, pest control, potting and planting all fall within their daily duties.?They consider the coffee trees as their babies, and they have to oversee 30,000-40,000 plants at any given time. This requires them to be connected and observant to any minor changes in the young trees.

In addition to the baby coffee trees, the nursery staff grows, pollinates and cultivates our vanilla, black pepper, cacao, and dry Taro.?Thank you, Nursery Team, for raising the next generation of coffee and caring for the trees with such compassion!

Do I really need a Coffee Scale?

The simple answer is yes. Bakers, scientists, and baristas know that consistent results come from consistent and accurate measurements. Using a scale makes getting a great cup of coffee easier.

Using a ratio of 16:1 (although some prefer 15:1 for a bolder cup) you should be weighing both water and coffee. Our typical?morning cup is always 305 grams of water and 19 grams of coffee. Scoops are notoriously inconsistent, and coffees vary greatly in density by roast level and varietal.

When you try new coffee varieties you will always have a consistent baseline when using a scale. You will be able to evaluate your coffees on an equal footing and develop a deep understanding of your preferred coffee to water ratio. There are no negatives.

There are many other factors in making a beautiful cup of coffee but eliminating as many variables as possible is a great starting point and weighing your coffee and water is a unanimous step one in the specialty coffee industry.

America celebrates National Coffee Day on Sept 29th and a couple days later the world celebrates International Coffee Day on October 1st. For most people, those two days go by unnoticed and without fanfare. For the coffee industry as a whole, these are very important days to bring awareness to the entire network of coffee industry professionals from the farmer to the barista and every step in between. It is also a time when issues facing the coffee industry can be examined, discussed, given priority and millions of minds can begin working on solutions.

Last month we talked about eliminating variables, and the benefits of using a scale to weigh coffee and water ratios.? The next variable you should eliminate is the water.? You can choose the best beans in the world and if your water is bad, your coffee will be bad.? For most people, the general rule is clean, clear, and odor free water.? If it tastes good by itself, it will make decent coffee.?

Filtered and bottled water in most cases suffice but if you are truly a coffee nut getting distilled water and adding Third Wave Mineral Packs?to it creates the perfect water for coffee extraction and the results (I have tried it) are astounding.? The Specialty Coffee Association has the following recommendations:

Odor free, Chlorine free, Calcium Hardness between 50-175 ppm CaCO3, Alkalinity 40 ppm, PH 7.

As close as you can get your water to this formula the better your coffee will taste.

Whole Bean or Ground?

We are often asked if it is better to buy whole bean or ground coffee.?Certainly, if you want the freshest release of aroma and taste, grinding your beans just prior to brewing is the way to go. We say farewell to Group 1 of our farm crew this month.? Every year we bring in about 30 workers from Michoac?n, Mexico on the H2A agricultural visa program. They live with us for 6 months and pick coffee 6 days a week. A seasoned picker can pick roughly 200-300 pounds a day.?Many of the workers, who average 20-25 in age, have been to the farm several times. Thank you for your hard work and commitment to helping Greenwell Farms produce the finest 100% Kona Coffee. We look forward to seeing you next year!
