Chef Tim Richardson''s Favorite Thanksgiving Recipe

Shrimp and Pumpkin Bisque | Yields 2 Quarts

What you''ll need:
- ? lb. unsalted butter
- 1 tsp minced garlic
-1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped carrot -
- 1 lb shrimp
- 1 Tbs tomato paste
- ? cup brandy
- ? cup white wine
- 1 tsp dried tarragon
- 1 tsp dried basil
- 1 bay leaf
- ? cup cooked white rice
- 2 pts chopped fresh tomato
- 2 cups seafood stock (if unavailable, use chicken stock) 
- 3 cups heavy cream
- Dash Tabasco
Kosher salt and freshly ground white pepper

Method:
1. Melt the butter in a medium-sized, heavy-bottomed stockpot over medium heat.
2. Add garlic, celery, onion, and carrot, and sweat until tender.
3. Add the tomato paste and cook for 2 minutes.
4. Add the brandy and wine and remaining ingredients (excluding the shrimp), and bring to a boil.
5. Reduce the heat and simmer for 25 minutes.
6. Add the shrimp and cook an additional 3 minutes.
7. Blend the bisque until smooth, and season with salt and pepper to taste.
