Once distilled, we take an additional step by mellowing our whiskey drop by drop through 10 feet of hard sugar maple charcoal. This is called the Lincoln County Process, or charcoal mellowing. In Lynchburg, though, we simply call it the extra blessing. And we’re one of the only distilleries in the world to still do it. It may take more time and more money, but the proof’s in the sip.
