From Ethiopia''s Yirgacheffe region, this vibrant, juicy, floral coffee was processed at the Halo Beriti Washing Station - which was established in 2014 and serves 750 smallholder producers, who deliver their coffee in cherry form. This particular lot is part of a "special preparation" in which hand-sorting was done repeatedly throughout the receiving and drying process, ensuring that only perfect cherries made it into the bags.

GATOMBOYA
Washed Process
Tasting Notes... Grapefruit, Floral, Vibrant.

This super vibrant and crisp coffee is boasting with floral notes and hints of grapefruit. The Gatomboya factory, or washing station, refers to the nearby Gatomboya River in Nyeri, Kenya. This washing station is used to wash and ferment coffee at the factory before being dried on raised beds. High altitudes, high quality varieties, strict picking standards and meticulous fermentation all lead to the amazing experience of drinking this coffee! 

** We recommend brewing at a slightly lower ratio to lessen the intensity.

This natural process coffee from the Central Valley of Costa Rica is a very complex coffee that is extremely fruity with a winey acidity. It reminds us of strawberry rhubarb pie or sometimes blackberry and meyer lemon. Calle Lajas was produced by third generation coffee producers that are committed to quality and innovation. Oscar and Francisca Chaco?n are among the very first farmers in Costa Rica to produce Honey and Natural process specialty coffee. Now the Chaco?ns produce a wide range of coffees, modulating the drying time in order to create different effects in the cup.
