We are a Snickerdoodle loving family. There. I said it. Of course, we love cookies of all shapes and sizes but for whatever reason, Snickerdoodles are one cookie that always sounds like a good idea. ????????
I've always had my kids help make these cookies because they enjoy rolling the cookie dough in the cinnamon-sugar mixture. This pumpkin version is no exception. We've taken the flavor up a few notches with the addition of pumpkin and pumpkin pie spice.
They are truly phenomenal and always a treat - especially during the fall and winter months.

My favorite thing to do is put it on a sunny side up egg (for a little bit of gooey and making it not dry, then have a piece of bacon and make it my breakfast. Easy to reheat to toss on the eggs in the morning, and if you make bacon ahead of time…breakfast in under 10 that’s SUPER filling and yummy. This has made it on my list of foods to keep around, and I love to cook and make simple recipes, so i’m gonna take the time to peruse your blog a bit more. Thank you thank you thank you!"

I've made this 3 times (we had a LOT of potatoes we got for free and we were sick of baked potatoes, and we host people often) and told like 8 people to make it - it's so simple and delicious! My favorite thing to do is put it on a sunny side up egg (for a little bit of gooey and making it not dry, then have a piece of bacon and make it my breakfast. Easy to reheat to toss on the eggs in the morning, and if you make bacon ahead of time.breakfast in under 10 that's SUPER filling and yummy. Today is Pi Day and as an engineering grad, it''s one of those crazy days I celebrate each and every year. I love math ??
Today isn''t what most Pi Days look like in my home though. It''s a lot more somber as the reality of our current situation sets in. There''s a lot more anxiety because our last trip to Costco and Target revealed the stark reality of this situation and if anything shouts fear, it''s got to be empty shelves where rice and pasta once sat.
Sports and activities are being canceled left and right and we had to tell the boys last night that they are going to be staying home for a full month because their school has been shut down.
I know that all of you are facing similar circumstances and I hope it brings some comfort that we are all in this together and we will get through it together.
It''s my dad''s birthday tomorrow and I won''t be seeing him because I''ve been traveling for work and he has an autoimmune disease. Meaning, I''m going to steer clear for awhile. But, I know that when I do see him, I''ll be bringing him his favorite dessert, Coconut Cream Pie.
