Like many others in the world, quarantine has made us extra creative. We''ve been reimagining the way we dine, coming up with new recipes, socializing in new ways with friends and family, and in the Meat Department, we''ve been super creative in the innovation department! A few weeks ago we released our new Loukaniko sausage, and today we''re excited to launch yet another new sausage! Our new Chorizo is inspired by the flavors of Mexico, made with ancho chilies, oregano, and warm spices. It''s completely different than any sausage we''ve ever made and very similar to a Mexican Chorizo! We wanted to launch it just in time for Cinco de Mayo and help you all celebrate. TRY OUR MEXICAN CHORIZO
This sausage is so different than any of our others because we actually like to take it out of the casing. Though it is not raw like you may see a lot of crumbly Mexican style Chorizos, you can still perfectly crisp ours in a pan for tacos, queso fundido, or a tostada. It''s crazy to think that here in Portland we are two solid weeks into these changes. Restaurants closed 16 days ago, and all of us are still trying to adjust to this new normal. We''re continuing to work with businesses from the Portland area to keep spirits high and some business coming in, but it''s especially hard for the businesses whose main source of revenue comes from food service. Not only has it been hard on the businesses who rely on restaurants to keep them going, but it''s hard on all of us. We rely on restaurants for a sense of community, a way to escape the stress of a busy day, and above all, a place to enjoy the amazing food that we often can''t or don''t prepare for ourselves at home. But being without restaurants doesn''t mean you have to be completely without these things. We encourage you to keep "experiencing restaurants" in a new way. Whether that means following chefs on Instagram to see what they are cooking at home, ordering food-to-go, buying your favorite restaurants'' cookbook, or buying high-quality ingredients that restaurants typically use. TIPS AND TRICKS FOR ENJOYING LARGE FORMAT SALAMI
PEEL THE CASING. Unlike our small salami, these large chubs are made with a thick, hand-sewn casing that should be peeled before eating. It also is wrapped in a salami net, which is used when hanging the salami to cure. Both of these can easily be peeled back by scoring down the length of the salami with a knife. SLICE VERY THIN. Using an ultra-sharp knife, this salami should be sliced very thin, half the width of a quarter. You can definitely do this by hand, it will be easiest to slice right when you pull it out of the fridge. SEAL IT TIGHTLY. We suggest slicing and peeling the casing back only as far back as you need to for the current serving. Then keep it in the casing, and wrapped tight in the butcher paper it comes in!

The 1655 Gruyere is made at Fromage Gruyere, the smallest public Gruyere affineur and the only one in the canton of Fribourg, Switzerland, the birthplace of Gruyere. This cheese is marked by a fresh cream blast, bright fruity flavor, deep and structured nuttiness, and an even, toothsome body studded with pinpoint crystals.
Fiore Sardo DOP is a hard smoked cheese made from whole raw sheep's milk on the Italian island of Sardinia. Upon slicing, the paste reveals a compact, dense, straw yellow, or white color with a subtle grit. It is wonderfully rich in flavor, with umami depth equaled by the salty tang and a hint of fruit under the deep smoke.
Bleu D'uavergne is a traditional cow's milk blue cheese that is named after its place of origin in the Auvergne region of south-central France. This blue mold grows naturally through small needle holes pierced vertically into the wheels prior to aging. The resulting cheese is very pleasing, but not overpowering, with balanced mineral notes that add complexity to the creamy texture.

Oregon truffle season is something everyone in the world should be celebrating. These fungi grow naturally and beautifully under the floors of Oregon''s forests and are foraged traditionally by dogs. Unfortunately, truffles are too often known for the pungent smell and flavor that is represented in many products with them. But Eli has always had a deep love for how they are grown and their rich, nuanced flavor, so he set out to find a new way to highlight truffles from Oregon. Saucisson de Truffe is what he came up with. Rather than putting the truffles in the salami, he perfumed our Saucisson de Arles with white truffles. After being harvested, the salami is laid in a bed of white truffles for up to three weeks so it can fully take on their rich aroma. We only produce Saucisson de Truffe once a year, when we can get Oregon truffles at the height of their natural season. This year, we got the first round of truffles in January, but because of the time and attention to detail we take to make the salami, they are just ready now! CHOUCROUTE GARNIE KIT
This dish is everything you''ve been looking for to keep life simple. Hearty ingredients, only two pots (who wants to do dishes anyway), and a crowd-pleaser! Don't forget a crisp salad and copious amounts of crisp Riesling (Albert Boxler or D?nnhoff will do nicely) as perfect accompaniments. Check out the recipe from the Olympia Provisions Cookbook below!
INGREDIENTS
2 bay leaves
10 black peppercorns
16 small fingerling potatoes
8 slices bacon, cut crosswise into thin lardons
21?2 pounds (1.1 kg) Kielbasa, cut crosswise
4 Bratwurst, cut crosswise
4 Frankfurters, cut crosswise
21?2 pounds (1.1 kg) Sauerkraut
1 tablespoon caraway seeds, toasted
2 cups (480 ml) chicken stock
1 cup (240 ml) dry Riesling
8 (1?8-inch/4-mm) slices OP Sweetheart Ham
Whole-grain mustard, for serving
INSTRUCTIONS
1. In a medium pot, bring salted water to a boil with the bay leaves and peppercorns. Add the potatoes and boil until tender when pierced with a fork, about 20 minutes. Drain and let cool, and then slice each potato in half lengthwise.
2. In a large Dutch oven over medium-low heat, saut? the bacon
until crisp and its fat has rendered, about 20 minutes. Using a
slotted spoon, transfer the bacon to a small bowl and set aside.
Increase the heat to medium and add the kielbasa, bratwurst,
and frankfurters to the pot. Cook, stirring occasionally until the
sausages are lightly browned, about 5 minutes. Add the sauerkraut, caraway seeds, chicken stock, Riesling, and the cooked bacon and stir to combine. Cook, covered, until the sauerkraut is crisp-tender (as cooked cabbage should be), about 15 minutes. Add the potatoes and stir in, then add the ham slices on top and continue to cook until the potatoes and ham are just heated through, 5 to 6 minutes. Divide the dish evenly among eight plates, and top each with a dollop of mustard.

The Thirty Years' War, which came to an end in 1648, gave Europe the concept of a strong sovereign state and gave France choucroute garnie. With the annexation of Alsace and Lorraine, France gained important strategic and gastronomic high ground.
But enough dusty history. What of the dish? Sauerkraut, cooked with bacon, stock, and dry white wine, then garnished with pork-lots of pork. Like our Bratwurts or our Dunkelwurst. It seems like every single day we hear a story about how COVID-19 is affecting one of our small business friends. Whether it''s a restaurant that feels like they won''t be able to bounce back from these closures, a small producer who doesn''t have anywhere to move their inventory because all of their buyers have closed their doors or a business that has had to cease operations because one of their employees has been infected. All of these stories hit us at our absolute core because we too are feeling the same pains and have the same fears. Briar Rose Creamery is a small team of cheesemakers, crafting award-winning cheeses in Dundee, Oregon. Everything is made by hand, from start to finish. We first met Sarah (Cheesemaker from Briar Rose) at the Portland Farmer''s Market when she was selling her cheese and we were selling our meats. Since then, we have worked with her at various events and featured here cheeses on the menu at our restaurants. Here at OP we start every meeting by going around the room and sharing "one good thing". This is our way of showing gratitude for the little (and big!) things that bring us joy. It''s a small but important tradition in our office and something that has come to be even more meaningful amidst the stress that the current world is bringing to all of us. Over the last few weeks, it seems like every single one of our staffers has good things related to food, whether it''s the dinner they ordered in from their favorite corner spot or the meal they cooked at home with their family. These good things are making us realize that food really does bring so much happiness to all of us. Here are some of the best things our staff has shared as their "good things", we hope it gives you some inspiration to also find a little joy through food.
THE CRISPER CLEAN OUT
Our National Sales Manager, Alexis, arguably has the best food-related good things. It seems like every day she is sharing the most delicious meals that she cooked with her sister the night before. Bulgogi beef, meatball subs, bolognese, you name it, she''s making it. Last week she did what she called "the crisper clean out", a task that we should all probably do more of. The result? This Chopped Salad with Sweetheart Ham, pickles, eggs, and basically anything else she found in the fridge.
A TRIP AROUND THE WORLD
What do you do when you''re stuck at home but have the travel bug? Take yourself on a trip through food! Well, at least that''s what Megan, our Marketing Manager has been doing. First it was tacos, ceviche, and margaritas for a quick "trip" south of the border. Next, it was a bit of a "longer flight" to Spain with Tortilla de Patatas, Manilla Clams with Chorizo Navarre, and Sangria. This week she''s staying home to enjoy this sunshine, grill in the backyard, and play some cornhole with a cold one in hand.
A CHANGE OF SCENERY
In a normal week, our CEO Michelle eats out about 50% of the time. She is a restauranteur after all! So this whole #stayhome thing has definitely called for some creativity when she craves a change of scenery. We''re thoroughly impressed by her latest change up, bringing her day bed and TV outside on the patio. She set it up next to her outdoor fireplace, sliced up some salami and Briar Rose Cheese, poured a glass of wine, and had a date night at home.
VIRTUAL POKER NIGHT
SW Sales Manager, Patrick, has been teaching us all a thing or two about virtual hangouts. He''s been "Netflix Partying" to have virtual movie nights, taken his Friday night game nights to Zoom to keep the tradition alive, and most importantly, been having virtual Poker Tournaments with his friends from all across the US. Apparently, he''s been the big winner quite a few times, we can definitely say the luck is coming from his plate of Sopressata.

While we''re all trying to figure out this "new normal", it''s presenting many opportunities to figure out new ways to connect with your loved ones while still practicing social distancing. With Easter coming up, things are going to be especially different. A time that we typically come together around the table to celebrate Spring and family will have to be spent separately, but that doesn''t mean you have to be alone. Did someone say virtual Easter? That''s right, this is the year of Zoom, Facetime and Google Hangouts, and while these tools are typically used as a way to catch up with friends or have a conference call, who says you can''t put a computer at the end of your dining room table and have dinner with your family who lives across the country (or down the street)? As some of you may know, our founders Elias and Michelle come from a big Greek family. Our Loukanika salami is a Greek-style salami that is made with the recipe their dad brought to America and is now one of our most celebrated salamis. For the last few months we''ve been working on a Greek sausage that is inspired by our Loukanika salami. It wasn''t supposed to launch until June, but we realized there is no better time for all of you to try something new at home, so today we''re excited to introduce you to the newest member of our sausage collection: Loukaniko!
TRY OUR NEWEST SAUSAGE
This new sausage is made with oregano, lemon zest, and garlic, and will immediately transport you to the coast of Greece. This Sunday is Greek Orthodox Easter, one of our favorite days of the year, and if you''re looking for something to celebrate (aren''t we all?), we highly suggest following our lead and grilling up some Loukaniko! We''re so stoked to share our favorite Springtime recipes to enjoy alongside our newest sausage, but for Sunday we''re keeping it simple with pita, tzatziki, and spanakorizo.
Spanakorizo is a staple in the Elias Cairo household, you can expect to see it on his table at least once a week. This Greek Spinach Rice is so simple yet completely delicious and is the perfect side alongside a "build your own" gyro table. Once you''ve got the Loukaniko and pita grilled up, just add two taberna classics: tzatziki and red onion salad. For the tzatziki, we just mix some yogurt, lemon, fresh garlic, cucumber, mint, and dill in a small bowl. The red onions should be thinly sliced and mixed with red wine vinegar, olive oil, and whole leaves of parsley. We also like to make a simple charcuterie board with kalamata olives, Briar Rose Fata Morgana, Loukanika, and pita to go along with this spread. We hope you''ll celebrate with us this weekend and of course, break a few plates. Opa!

David Griggs founded Xocolatl de David in 2004. While the focus is certainly chocolate, David's confections stand out due to his careful selection of unconventional ingredients. In the Oregon Charcuterie Entertainer, we are featuring all three flavors of his Raleigh Bars.
JACOBSEN SALT CO.
Founded in 2011, Jacobsen Salt Co. was the first company to harvest salt in the Pacific Northwest since Lewis & Clark built their salt works in 1805. Their flake and kosher salts are Harvested from the cold, pristine waters of Netarts Bay on the Oregon Coast. They also have a local hive program, from which they make amazing honey.
BRIAR ROSE CREAMERY
Briar Rose Creamery is a small team of cheesemakers, crafting award-winning cheeses in Dundee, Oregon. Everything is made by hand, from start to finish. Briar Rose sells their cheeses at farmer''s markets and restaurants, and they can also be purchased through the Briar Rose Cheese sampler on our website!

As some of you may know, our founders Elias and Michelle come from a big Greek family. Well, for the last few months we''ve been working on a Greek sausage that is inspired by our Loukanika salami, and there is no better time for you to try something new than right now!

SAUSAGE, OBVIOUSLY
Our co-founder and head salumist recently talked with Alyse Whitney for The Spruce Eats about what meats are absolutely essential for a fully stocked freezer. Sausage was on the top of his list, obviously.
BACON
A few months ago we launched Sliced Bacon online, and it seems like since then we''re using 10x bacon in our cooking. Lardons on salad, a slice or two for breakfast. You name the dish, bacon makes it better.
