As always, your health and comfort are our main concern. Safety measures include customer and staff temperature checks, visors for all staff, restaurant fogging before each service, hand sanitizer throughout the building, and our new opening hours will allow us to stagger dining times further.

5 Ways with Cauliflower

It''s spring, the weather is amazing and despite all current challenges, we want to keep busy creating and sharing healthy dishes using fresh ingredients and cupboard staples.

This is one of five fun creative cauliflower recipes I have worked on with my children this week. The other four will be on our Instagram over the coming days - please follow us.

TEMPURA OF CAULIFLOWER

You need:
1 large, fresh cauliflower, broken down (freshness is crucial)
1lt sunflower oil using a deep fryer or a wok
Sweet chilli sauce

For the Batter:
2 really fresh egg yolks
350ml almost frozen sparkling water
200g self raising flour
1 tsp bicarb of soda
1 tsp cornflour

Method:

Whisk the egg yolks, add a small amount of water and whisk again. Then add remaining water stirring gently. Add dry ingredients and mix with 2 chopsticks (top tip from Jamie) - yes chopsticks! The batter should be super lumpy. Dip florets in batter and then drop in the hot oil. Cook till golden, then drain on to kitchen paper. Sprinkle generously with salt and pepper and serve with sweet chilli sauce.

It''s great to be back!

That's an understatement! It was amazing to see Pied ? Terre busy once more - meeting many old friends and lots of new diners, introducing our new menu format, and Asimakis' incredibly innovative dishes. It was also fantastic to host a full house on our first-ever Saturday lunch.

Our team is thrilled and really grateful to be back doing the job they love. I am so happy to have such an enthusiastic crew who have embraced all the new guidelines with great gusto - temperature checks, visor wearing, single-use menus, mindful distancing.. and of course the job everyone wants - fogging the restaurant before each service for everyone's safety!

We are taking advantage of all the wonderful private dining spaces in our 1873 Townhouse, to ensure people can dine confidently in comfort and safety. We have made our elegant first-floor Chef's Table available for bookings of 4-8 diners where you can enjoy the restaurant menus. Call Elly on the number below to request this.

Enjoy cooking at home

Over the last 8 weeks, Asimakis has been busy in lockdown creating healthy homemade dishes that take as little
as 10 minutes to make.

Published in The Guardian last Thursday, here is one of his recipes, that I made for lunch today with my children''s help.

Filling and nutritious, it will go a long way to keeping you fit and strong.

Try it for yourself and enjoy!

EGGS KAGIANA

You need:
4 Large tomatoes
7 Eggs
Salt
Pepper
Oregano
300g Feta Cheese

Method:

Grate four large tomatoes into a pan, over a medium heat. Cook until the water has evaporated. Stirring continuously, add in seven whisked eggs and scramble together. Season to taste with salt, pepper, and oregano, then pour into an ovenproof dish. Top with 300g crumbled feta and bake at 220C until the cheese begins to melt.

Serves 2-3

Dear Friends

Due to the announcement on Friday from the Government, it is with deep regret and sadness that I have closed the doors of Pied ? Terre for the time being.

The health and well being of our guests and our family team is of utmost importance to me and it is now time to close. Our heartfelt thanks go out to those who will be tirelessly working around the clock to keep us all safe and well.

I cherish the support you have given Pied ? Terre over the years, as well as during the difficulties of recent weeks. It has enabled us to provide great food and a hospitality we are proud of for nearly 3 decades.

We thought you would like to know some of the many measures that will be in place for your comfort and safety: the restaurant will be fogged before each service; there will be fewer tables to allow appropriate distancing; we are introducing single-use menus; all staff will be wearing visors; hand sanitiser will be placed on tables and at every possible point you might need it through the building, and there will be daily temperatures checks for staff. Vegan recipe of the week

Our Vegan Feast Menus have had great reviews, so as well as releasing the NEW menu for this Saturday, we wanted to share one of the delicious recipes for you to make at home:

Vegan Roasted Chilled Tomato Soup

You need
500g plum tomatoes
1 small red pepper, sliced
1 small white onion, sliced
2 cloves garlic thinly sliced
10g sugar
5g salt
Bunch of thyme and bay leaf tied with string for easy removal
30g olive oil
1lt veg stock
Optional cabernet sauvignon vinegar

Method
Cut the tomatoes in half, top with a slice of garlic and place on a tray. Roast in the oven at 220C for 15 minutes. Sweat the red peppers and onions in a pan. After roasting the tomatoes bring all listed ingredients together in a large pan and simmer for an hour. Remove thyme and bay leaf and blitz the mix with a hand blender or top blender, leave to cool and then check the seasoning; add cabernet sauvignon vinegar, or a touch more sugar or lemon juice to taste.

Easter Wishes

This is an Easter like no other. Despite current challenges, we hope that you have a very enjoyable weekend and here is a delicious lamb recipe from Asimakis that you might like to try.

We also wanted to thank you for your kind messages of support and good wishes and looking forward to filling your glass once more.

EASTER LAMB RECIPE

For a 1.3 kg lamb leg, you will need 270g marinade, 4g salt, 2g pepper (for larger legs up the amount of marinade proportionately). This recipe will also work well with a shoulder of lamb.

For 270g of marinade: 100g olive oil, 15g garlic cloves, 30g parsley stalks, 50g mustard, 7g thyme twigs, 5g of rosemary leaves, 10g water

For the potatoes: 1kg baby potatoes, 70g olive oil, 130g lemon juice, 2 bay leaves, 5g oregano, 100g butter.

Method:

Prepare the Marinade: Mix in a blender - olive oil, a little water, garlic, fresh thyme, parsley along with the stalks, rosemary and a little mustard. Grind them to make a smooth mixture.

Prepare the Lamb: Salt the lamb well and pour the marinade over, rubbing it in with your hands and taking care that it goes everywhere.

Prepare the potatoes: Place the potatoes in a bowl, adding the oil, butter, lemon juice, oregano, bay leaves, and salt.

Putting it all together: Place the marinated lamb on top of the potatoes in an ovenproof dish and cover with foil. Bake in a pre-heated oven at 120 ? C fan assisted for about 5-6 hours until the meat softens and takes on a nice colour.

Asimakis Tip: If the lamb does not get coloured, increase the oven to 180?C, take off the foil and cook it for a few minutes, so that it gets a nice color.
