Decadent Cacao Fat Bombs!
Lately I have been having fun experimenting with making my own nut butters. I am all about my food processor, and recently got a new one with some fun and extra tools. It is so satisfying to see a few separate ingredients all come together to make one yummy recipe. In the last few months I have tried everything from macadamia nuts, hazelnuts, almonds, and pecans. Combining these nuts with different sweeteners and spices can make for a wide variety of incredibly nutritious and delicious nutty treats. Enter these decadent fat bombs!
No-Bake Chocolate Berry Slices
Making healthy, real food desserts isn't always easy. Gluten-free flours can be tough to work with, recipes seem to have a million steps and at times it can feel like you've spent days in the kitchen experimenting only to end up with a recipe flop. But every so often I find a dessert like this one that tastes amazing and is super simple to make. I guess it's hard to go wrong with chocolate, nuts and fresh berries. This unique nutrient dense dessert combines these beloved ingredients into something that falls between a tart, pie and fruit pizza. Call it whatever you'd like; most importantly it is delicious!
Tasty Roasted & Stuffed Acorn Squash with Sunflower and Pomegranate
One of the best things about this dish is that it can be made in two ways: 1) with quinoa stuffing as a veggie-based side dish, or 2) with ground beef incorporated right into the filling for an all-in-one meal. As you can see, the recipe can essentially be adapted to fit with whatever fixins' you have on hand. Swap out the vegetables depending on what's lingering in the fridge, or use dried spices instead of fresh. Also, the stuffing itself is so tasty that if you have any left over, it can easily be used over a salad the next day. I mean, it is hard to go wrong with squash at this time of year, right?
Caramelized Onion Farro Risotto with Butternut Squash and Sage
Who doesn’t love the scent and sound of onions sizzling in butter? Two basic ingredients that create pure magic just by cooking (sorta) slowly over medium heat - oh miracle of miracles! Add to that the scent of fried sage and roasted butternut squash. And you’re right on your way to a delicious, festive dish that will delight your guests to no end! (But really isn’t difficult to make… shh, we won’t tell if you won’t!). This Caramelized Onion Farro Risotto with Butternut Squash and Sage is a study in balance. The chewy farro paired with the creamy butternut squash. The sweet caramelized onions with the deep herbaceous-ness from the fried sage. A fancy tasting dish that takes little skill and just a bit of time.

We’ve got a thing for french bakeries. Bite-sized pastries, fancy espresso drinks, curiously shaped breads, and that feeling that so much care went into the creation and preparation of this beautiful meal that the calories just don't count. The intricate elegance of it all immediately takes us out of our day-to-day grind and into the sophistication of a streetside Parisian cafe. You have to taste this quiche!
