Is Alaskan white fish in season right now?


The short answer is yes! 

Salmon are very seasonal- the run time depends on species, as well as the specific river they are returning to. But Alaskan Halibut, Pacific Cod, Rockfish, Lingcod and Sablefish are different- they are sustainably caught in Alaska on a quota system from April until November.

In July, normally we are still talking all about salmon. This year the salmon return is a bit low...so all the fishermen we know are out longlining for white fish.

The flavor and texture of the different Alaskan white fish species range from lean and firm halibut, to rich and silky Sablefish. Because my Dad was a longliner, I grew up eating all different types of white fish, and each one is a show stopper when cooked just right. I encourage you to step out of your comfort zone and try a new type fish cooked a whole new way!

Wild Alaskan Halibut (6oz portion)
Mild, delicate, sweet flavor with firm texture. Very lean and low in fat.
Wild Alaskan Halibut Cheeks (1lb)
The flavor is mild and sweet like halibut, but the texture is similar to scallops.

Bright white meat. Mild, delicate flavor with a flaky texture.

Tender white meat, medium firm. Mild, sweet flavor with a nutty accent and flaky texture.

Wild Alaskan Lingcod (8oz portion)
Mild, delicate flavor with flaky texture. Similar to rockfish, but a larger fish with a higher fat content.

Wild Alaskan Sablefish (6oz portion)
Also called Black Cod. Delicate, white meat. High fat, rich, buttery flavor and tender, silky texture. Very high in healthy Omega 3's.
Sablefish Collars (2 lb)
The high fat content of Sablefish makes it ideal for smoking. The flavor is rich and buttery with a silky smooth texture and large delicate flakes.
