PICKLING SPICE
Got a pickle obsession? It might be ancestral. The pickling process can be traced back thousands of years-some say as far back as 2030 B.C. And it didn't take long for our pickle-loving ancestors to chef up these crunchy, cooling, preserved bites by adding some spices to the mix. Pickling Spice can include whatever flavours and spices feel right to you, but most blends carry sweet, warm notes featuring spices powerful enough to holdup to the pickling process. In our version, we use Mustard Seed, Coriander, Allspice, Clove, Ginger, Crushed Red Pepper, Bay Leaf, Cinnamon, and Dill Seed.

If you''ve been paying any attention to the culinary scene over the past 5 or 6 years, you''ve definitely heard mention of a spicy, aromatic hot sauce known as harissa. Found in both paste and powder form, this blend of herbs, spices, and oil can be found on most tables in the Middle East and North Africa and is as ubiquitous as sriracha or ketchup in its usage in some parts of the world. Hello fellow spice-fans, Molly here! Long long ago, I worked at the most incredible summer camp in the mountains of Western North Carolina, and I''m not embarrassed to say that my favorite time of the day was snack time. We would bring out the campers a HUGE bowl of popcorn made on the stovetop, with tons of nutritional yeast dumped on top. Ever since it's been a go-to snack of mine. I recently decided to spice the original recipe up with Spicewalla's Blackening Rub. With paprika, onion, garlic, white pepper, black pepper, cayenne, basil, and marjoram, it's spicy, sweet, and adds a whole new complexity to the flavour of the popcorn.

Since it''s peach season in the South, and in our opinion, the most wonderful time of the year, our wildly creative blend & recipe developer Alyse Baca decided to whip up a Peach Upside-down Sfouf cake. This recipe is inspired by two classic cakes, and creates a fusion of Lebanese and Southern baking that will blow your mind! While Upside-down cake is as American as apple pie, you may be wondering what a "sfouf" is. It's a traditional Lebanese turmeric cake that''s similar to cornbread in texture, and meant to be served with coffee or tea. Inspired by this cake, we found that with its turmeric, ginger, and cinnamon, our Golden Milk blend is the perfect addition to this recipe, providing the traditional golden color of the Sfouf cake as well as warming spices to compliment the sweetness of the peaches.

Clafoutis (pronounced klah-foo-tee) is a decadent French custard that is baked with fresh fruit and is soon-to-be your new favorite summer dessert. We adapted this from Julia Child''s clafoutis recipe because it''s already perfect and we''re not here to mess with perfection. We almost wouldn''t change a thing, but ... maybe some brown-butter infused cognac OR a Mezcal and chocolate version wouldn''t be too bad? Tested it out and we weren''t wrong. So we bring you Eggnog with Brown-Butter infused Cognac AND Eggnog with Mezcal & Creme de Cacao. You tell us which is better!

DAY 11: SESAME TAHINI COOKIES

Behold the Sesame Tahini Cookie! These gluten-free and dairy-free beauties really deliver on flavour and texture. Coated in toasted sesame seeds and flavored with creamy tahini, these nutty, somewhat savory cookies are sure to be your new obsession. You're welcome in advance.

DAY 12: SESAME MISO HOT BUTTERED RUM

We can''t have favorites but... we may have saved the best for last. Toasted sesame seeds lend a nutty, subtle vanilla flavor (did we mention how perfect this drink pairs with our Sesame Tahini cookies?) Miso is both salty and savory, which when combined with the sugary-sweet-butter-batter creates the perfect balance of flavors.
