The Hidden History of Regional Burgers

Welcome to our summer cookout spectacular! We talk with renowned burger historian George Motz about the history of the hamburger, and about the wide range of regional burgers across the country, many of which are unknown outside their areas. Then we get an incredible burger recipe from chef Jehangir Mehta, inspired by Indian street food, that's made with 25% mushrooms. Finally, our old friend J. Kenji Lopez-Alt stops by for a debate that's sure to spark conversation at your next socially-distanced outdoor gathering: Should potato salad be called a salad?

Three Test Kitchen Stars Leave Bon App?tit

On Thursday, three stars of the Bon App?tit Test Kitchen- Priya Krishna, Rick Martinez, and Sohla El-Waylly- announced that they are leaving the hugely popular YouTube channel. Last week we reported that these departures were likely - several unnamed sources told us the people of color were still being offered much less than their white counterparts make. Now, the fate of the Test Kitchen video series is unknown.

Listen to last week''s show to find out what''s been happening behind the scenes at Bon Appetit.

WHAT WE''RE EATING

- We had a tropical storm in the northeast so we were without power for a week. Just got it back last night. Things got pretty bleak. One day we had Jiffy Pop for lunch. By the end I was grating Cheez Balls on to hard boiled eggs. But now we''re back on the grid! (Remember to follow me on Instagram if you really want to see what I''m eating.)

- Emma is eating bannana bread, and finally checking that recipe off her quarantine bingo card.

- Andres is eating pork meatballs using this NYTimes recipe.

- Daisy is eating shrimp tacos with a creamy lime slaw.

- Tracey is eating the Hellboy from Paulie Gee''s Pizza

- Jared is eating lots of gazpacho as local tomatoes are now abundant in New York.

WHAT WE''RE READING

- I''m reading Molly Wizenberg''s excellent new book, The Fixed Stars. You heard her on The Sporkful years ago, she often writes about food and she co-hosts the podcast Spilled Milk. But this book isn''t about food. As the summary says:

From a bestselling memoirist, a thoughtful and provocative story of changing identity, complex sexuality, and enduring family relationships.

At age 36, while serving on a jury, author Molly Wizenberg found herself drawn to a female attorney she hardly knew. Married to a man for nearly a decade and mother to a toddler, Wizenberg tried to return to her life as she knew it, but something inside her had changed irrevocably. Instead, she would discover that the trajectory of our lives is rarely as smooth or as logical as we'd like to believe.

Read more about the book and order it here.

- Emma is reading about the true origins of the potato.

- Andres is finally reading How To Do Nothing by Jenny Odell.

- Tracey is reading The Vanishing Half by Brit Bennett.

Take care,
Dan
