This year we’re looking forward to the Super Bowl because we get to come together with our friends and family, enjoy good food and drinks and even better company. 

Below we’ve pulled two recipes exclusively for you from Marks Salt Block Grilling and his Field Guide to Bitters and Amari to whip up this Sunday - or at any other gathering calling for wings and a cocktail.

Salt Grilled Sichuan Wings

Taking chicken wings from their familiar buffalo home and flying them over the prairies and mountains, across six thousand miles of ocean to a jungle coastline is an opportunity to discard preconceptions about how much flavor a wing can carry. Salt is the fuel that will get you there. The experience is supersonic, so precautions need to be taken, for safety’s sake. We bring Sichuan pepper along for the ride, anesthetizing your mouth with it’s numbing zing, a sort of spicy safety belt that gives you a much-needed sense of security as you zoom.

Bitter Boosted Mint Julep

This take on the classic Mint Julep will complement the Sichuan Wings above perfectly. The soothing mint and smooth bourbon will help wash over the pleasant spice vibrating through across your tastebuds and cleanse them for the next bite, bite after bite.

With the grips of winter setting in and many home-bound nights in the near future, we're looking forward to wrapping our hands around a mug of spiced drinking chocolate and enjoying good company.

The melding of dark chocolate, cardamom, anise, cinnamon, cloves and fall spices ignites a warm feeling of nostalgia and familiarity that builds anticipation of the season to come and both memories past and those to be made. 

With a blend of spices and chocolate, the rich minerality of Bitterman's Fleur de Sel enhances the flavors and aromas of each spice to impart harmony into your cup. 

*This recipe is originally for iced drinking chocolate, however, simply enjoy while hot to warm yourself up this winter.

Just in case you want to keep it close...here's the recipe

Ingredients

• 1 serving
• 1 cup water
• 50 g dark chocolate
• 1/2 cup brewed thai tea
• 1/2 cup coconut milk
• 6 tbsp sugar
• 1/4 tsp cardamom
• 1/4 tsp star anise powder
• 1/4 tsp cinnamon
• 1/4 tsp galangal powder
• 1/4 tsp vanilla extract
• 1/8 tsp cloves
• 1 two-finger pinch Bitterman's Fleur de Sel

Directions

1. Warm the water in a small saucepan.
2. Just before it boils, remove from heat and add the chocolate. 
3. Whisk or blend with an imersion blender until completely melted and incorporated into the water, 1 to 2 two minutes.
4. Combine the remaining ingredients and whisk/blend thoroughly, about 2 minutes.
5. For warm: Place back in the pan and heat up to a simmer. 
6. For Chilled: Pour over ice into a collins glass and serve.
