Scenes Like These

These basic structures called?sugar shacks?often line the dirt roads that snake all throughout?Vermont.?With cold nights and warm days characteristic of the late winter and early spring,?when you see steam?billowing?from their roofs,?it''s sugaring season!

Traditionally, this week is celebrated with?Vermont?Maple Open House. This is normally?a time to visit the maple syrup makers all throughout the state, to learn about the process of making liquid gold, and to witness something truly special that takes place in only a small portion of the world.?Unless you''ve been in the woods for the past two months, you''re?aware that across the world exists the rapid spread of coronavirus.?

The Maple Sugaring Process

Given the cancellation of the 2020 Vermont Maple Open House weekend (and now with thousands of?parents?scrambling to generate lessons for their now at-home students!)?we wanted to offer a quick education on the making of delicious, nutritious maple syrup.

Maple syrup is one of the simplest carbohydrates to produce. Maple?sap is collected, it''s then boiled?approximately 50:1, so that 50 gallons of maple sap reduces to just?1 gallon of syrup. When the sugar content hits 67%, voil?, you have maple syrup!

Tapping, checking lines, boiling, repeat. It''s maple sugaring season.
