Lettuce Celebrate this November!

Lettuce entertain, lettuce eat, lettuce celebrate, whatever way you look, there�s a lettuce for every culinary occasion. Lettuces are so popular and so versatile. They offer endless ways to be enjoyed this spring. From the star salad, in sandwiches or rolls, used as �wraps� or �boats�, the popular Caesar salad to a crunchy burger companion � each variety provides something a little different to the next.

�Head� lettuces, such as Iceberg, have a full heart, with a firm, tightly packed head, a central core and crisp outer leaves. The more leafy lettuces, including Buttercrunch, tend to have smaller hearts, while others maybe �heartless�, generally softer in texture and picked as individual leaves.

Welcome to our December newsletter. Season's Greetings - Hope you're kale and hearty!
There is so much wonderful summer produce available. We know it's December when fresh peas arrive in the markets. Out in the fields growers are harvesting and freezing peas for us to enjoy all year round. Below are some of our favourite recipes with New Zealand grown peas � enjoy!
We have had a busy year working with the Heart Foundation and great teachers throughout New Zealand. Read about our activities in 2019 below; these included 11 Professional Development sessions held throughout New Zealand. Read below for details of the 2020 Professional Development seminars.

Food Curriculum Project for Year 7 and 8 students

Vegetables.co.nz and the Heart Foundation are working together to provide Year 7 and 8 teachers with resources to help them arm students with the fundamental skill of being able to cook a healthy meal within their own budget, cultural and time constraints.

Professional Development seminars held across the country have been very successful. One teacher said: �I absolutely loved attending the course and have implemented your programme as my new food tech programme this year. It has been very successful.�

This initiative is the result of Massey University research that showed many Year 7 and 8 teachers were focusing on baking and sweet making in the classroom.

Each lesson plan includes a recipe with a video, food preparation and cooking skills to master, and an activity. These are in a digital format and can be downloaded, free of charge, from the front page of vegetables.co.nzs' website. A suite of Food skill cards, Easy Meals with Vegetables, safe food resources, and a student assignment are also included. The lesson plans have been developed in consultation with more than 150 teachers from a wide range of school deciles and a wide geographical spread.

A series of Te Reo M?ori activities are also included. These include a bingo game and word activities, which provide opportunities to learn about kupu tunu kai (words used in cooking). These are supported by the Heart Foundation�s Toi te Kupu M?ori and English Dictionary and vegetables.co.nz's Huawhenua poster. Feedback from teachers is very positive: �M?ori bingo worked a treat. I would say full steam ahead. Great game!�

Teacher feedback from the PD seminars recommended continuing the approach of �by teachers, for teachers� with vegetables.co.nz and the Heart Foundation taking facilitation and coordination roles.

The project is supported by funding from the Ministry of Health.

Welcome to our first newsletter of the decade � we hope it's a great year for all.
We celebrate seasonal produce with an inspiring tomato photo by Alex Southwick. The dish is Textures of Heirloom tomatoes: compressed green, slow roasted and marinated tomatoes, tomato water espuna, balsamic pearls, wood sorrel, tomato water and basil oil.
Rising star, Alex Southwick, is Demi Chef de Partie at Blanket Bay, Glenorchy. He won the New Zealand chapter of Chaine des Rotisseurs and competed in the World Championships in Canada and was ranked in the top 10 Junior chefs in the world. Read about Alex on page 2 of the latest Fresh Inspiration.

We hope you have had a wonderful February and are looking forward to a safe and enjoyable 2020.
Quintessentially Summer means corn on the cob! Quick to cook and delicious to eat off the cob. Try some of the tasty recipes below and view our latest video on growing and freezing New Zealand corn. On the vegetables.co.nz YouTube channel you�ll find four different playlists including 12 videos featuring growers showing how they grow their vegetables.
It�s back to school and thinking about packed lunches for kids and for adults in the workplace. Eating a healthy lunch is important for growing kids as it boosts energy levels, improves concentration while providing nutrients they need for growth and development. Be sure to include some vegetables and fruit in the lunch box: try a mixture of vege pieces (e.g. carrots, broccoli, capsicum), grated or sliced vegetables in fresh sandwich fillings or kebabs. Try one of these novelty sandwiches or add cucumber kebabs to the school lunchbox. Remember using seasonal produce is the cost-efficient way to add variety and colour.

Hummus with vegetables - A family favourite!
Cauliflower and spinach dahl curry - This delicious vegetarian curry is quick to make and tastes fantastic!
Bulgur wheat and kumara loaf - These delicious loaves are ideal for lunch boxes. Add a tasty salad and some pickle or relish.
Barley and pea risotto - A delicious twist on the traditional rice risotto.

Vegetable stir fried rice - The nutty flavour of brown rice combines beautifully with fresh vegetables in this tasty dish.

Eating a selection of coloured vegetables every day is important. To find out more about the benefits of eating coloured vegetables go here.

The phytonutrients or natural pigments that make vegetables so colourful have different protective qualities. Different colours give different health benefits.

Vegetables can be divided into five main colour groups - green, red, orange/yellow, white/brown, and blue/purple. Choose from each colour group each day; some vegetables give you the goodness of more than one colour e.g. cucumber with its green skin and white flesh.

Kiwi Kids Can Cook

The regional heats are on and kids aged between 5 and 12 years have been so adventurous and skilled, cooking a savoury dish featuring three New Zealand grown vegetables in just 30 minutes.

Iron Awareness Week, Vitamin C in vegetables, updated resources for teachers and yummy recipes to try in lockdown.

This week is World Iron Awareness Week and vitamin C helps with iron absorption - look at the vitamin C in vegetables info below.
Back to lockdown, level 3 for Aucklanders and level 2 for the rest of New Zealand. It's a chance to make some delicious dishes based on vegetables on hand and pantry finds.
Some of our new favs have been based on old goodie recipes. Saagwala sauce - a popular curry sauce pictured below - can be made deliciously different every time by swapping vegetables and serving with different grains. Think about using onions in place of leeks, spring onions or shallots, or cauliflower in place of broccoli, or swapping pumpkin, kumara, carrots, parsnips and swedes. Lockdown meals

Cauliflower and spinach dahl - quick to make and tastes fantastic
Radish, broccoli and beetroot salad - add colourful salads to the dinner table
Ratatouille - delicious with pasta, baked kumara, served with flat breads - your choice
Butter(less) chicken - a healthier version of a favourite
Saagwala sauce - add different proteins and vegetables to the sauce
Bolognese with vegetables - veg up spaghetti bolognese by adding fresh or frozen vegetables.
Vegetable and chicken fried rice - so easy with frozen NZ vegetables
Minted pea soup - a quick soup that can be enjoyed hot or chilled

Iron Awareness Week

Another reason to eat plenty of vegetables; serving vegetables with meat aids iron absorption.
Iron is essential for healthy red blood cells that carry oxygen around the body. Iron comes in two forms. Haem iron is found in meat, chicken and fish and is easily absorbed by the body. Non-Haem iron is found in plant foods such as vegetables, cereals, beans and lentils and is not as readily absorbed by the body. Eating vegetables containing vitamin C helps the body to absorb iron. Vitamin C can increase the absorption of non-haem iron by as much as 85%.
As well as helping the iron in food to be absorbed, vitamin C helps with tissue repair, supports a strong immune system to fight infection and helps health in general.
